Before food work begins
Complete and verify the food-handler permit, card, or required local authorization before starting deli food work.
Then check in with the current team: what is already prepped, cooking, low, or needing attention?

Follow store rules for food safety, labeling, storage, and equipment.
Coffee, counters, hot-case trays, dishes, and the final department clean are complete.
Use the store cash process and register-closed sign when instructed.
Wrap, store, clean, and hand off the department according to store procedure.

Keep service moving; on Thursday, start one fryer cooling; wrap trays in quiet moments.
5:00–6:30
Clean coffee around 6:00, move big pans to the back sink, and close in the gaps.

Estimate late demand before deciding whether a final approved batch is needed.
7:00–8:00
Call the front for the till, pull empty hot-case pans, and keep dishes organized.
8:00–9:00
Coordinate the oil change, complete cleaning, close the register, and hand off the department.

If a final batch is needed, use the active fryer and follow approved store guidance. Do not guess on food safety, holding times, or production amounts.

Thursday only
Around 4:00 PM: start one fryer cooling.
Keep the second fryer available for service.
Around 8:00 PM: work with the dish associate.
Use the designated oil drain, clean the bin, and refill with fresh oil according to store procedure.
Keep the close moving.
Pull remaining fried-food trays, stage dishes, and use the help to complete pots, pans, and mopping.

Around 7:00 PM, call the front for the till. Follow the store cash process and place the register-closed sign when instructed.
Start coffee cleanup around 6:00 PM; after later service, finish the smaller follow-up cleanup and wipe counters.
Pull trays, stage dishes, finish the department clean, and leave the department ready to open.
